How to Set Color in Option Set in the Model Driven app
Initially you can download this pcf gallery colorful optionset and import in the newly created solution in the
environment. Link is given below:

Once you have imported in the environment. Lets try to implement this and final result would be like:
I have created a field name Dispatch Status with Multiple Options now
Put the field in the form and open the classic editor, and double click the field and it will open the pop up like:
Go to control tab and Add Controls
once it is added, change setting like:
Then go to Details tab and Click on edit button and here you can set color to your options according to your need, like:
After setting color to your need save and publish the form. The end result would be like:
